Without electricity and chemistry, how can we rediscover the ancestral knowledge of how to preserve the staple food that is wheat? Archaeologists, a farmer, biologists and a baker are on a quest to discover a vanished agricultural technique: the storage of cereals in underground silos. To unearth this essential know-how from the past, the researchers are conducting an unusual experiment on the Roussillon plain. They are sketching out the life of rural communities in the past, in the hope that this will provide useful knowledge for today’s farmers.
